dc.description.abstractToplu beslenme sistemlerinde hizmet veren firmalara 1 Ocak 2020 itibari ile hazır yemek servisine yönelik etiketleme zorunluluğu getirilmiştir. Bu araştırma, toplu beslenme sistemlerinden (TBS) biri olan hazır yemek firmalarında görev alan farklı pozisyonlardaki personellerin alerjen, alerjenlere yönelik etiketleme ve alerjenlere yönelik çapraz kontaminasyon konusundaki bilgi düzeylerini belirlemek amacıyla yürütülmüştür. Araştırma sonucunda, TBS çalışanlarının test puanları 10 puan üzerinden; etiketleme 5,96±1,37, alerjen 5,70±2,17 ve çapraz kontaminasyon 5,22±1,66 olarak belirlenmiş, bu konuda ölçülebilir çalışmaların devamlılığı ve personellerin eğitimlerinin sürekliliğinin sağlanması gerektiği düşünülmüştür.
dc.description.abstractAccording to the regulation in 1 Jan 2020, companies providing services in mass nutrition systems are required to label ready-to-eat food items. This research was carried out in order to determine the knowledge level of the personnel in different positions working in ready-to-eat food outlets, a part of the food service systems (FSS), about labeling and cross-contamination for food allergens. While doing this study; it was predicted that there would be differences about labeling and cross contamination of food labels, according to gender, education, occupation and income level. As per results of the research, on FSS employees; Labeling, allergen and cross-contamination knowledge levels have been determined to be moderate, and therefore it is necessary to ensure the continuity of quantitative research studies conduct regular training of the employees on this subject.
